Breaking changes
* pirogue now uses [`psycopg.sql.SQL.format`](https://www.psycopg.org/psycopg3/docs/api/sql.html#psycopg.sql.SQL.format) for variables. Variables should therefore now be specified in curly braces instead of using `%(var_name)s`.
